Chocolate Strawberry Oasis Pie - Jenna's Recipe

Chocolate Strawberry Oasis pie, Marshmallow Dream pie, Everything’s Just Peachy Peachy Keen pie - is your mouth watering yet? Mine is.


With baking skills and pies described as biblically good, it’s no wonder that Jenna Hunterson finds herself taking her life experiences and turning them into delicious baked goods.


If you don’t know what I’m talking about, let me give you a quick run down. The 2007 movie Waitress, now turned stage musical follows the life of Jenna Hunterson, a diner waitress in a small town who finds herself in an unwanted pregnancy with her abusive husband. Coping with all of this through making pies and leaning on her two best friends, she also finds herself in a peculiar relationship with her new gynecologist.

I won’t tell you exactly what happens (but I highly recommend watching the movie and seeing the musical if you’re able to), but what I will tell you is that through the course of the piece, Jenna makes some incredible pies.


Being a big baker myself, I’ve always wanted to recreate some of them. Below is the recipe for her chocolate strawberry oasis pie.




Chocolate Strawberry Oasis Pie

Ingredients

  • 25 oreos, finely processed

  • 8 Tbsp melted unsalted butter, divided

  • 1 ¼ cups heavy cream

  • 1 tsp of instant espresso powder

  • 1 tsp allspice

  • 1 tsp cinnamon

  • 11 ounces quality chocolate, chopped

  • 4 Tbsp unsalted butter

  • 2 large eggs, lightly beaten

  • 3 Tbsp hot butter

  • 1 Tbsp hot water

  • Sliced strawberries


  1. Start by making the chocolate crumb crust by finely processing 25 oreos in a food processor. Once processed, place in a bowl and add 5 Tbsp of melted unsalted butter and mix until it resembles wet sand.

  2. Place in a removable bottom tart pan and press until it’s nice, even, and thin. Use a ramekin to get it into the edges (see video for example).

  3. Par-bake in the oven for about 8 minutes at 350°F.

  4. While the crust is par-baking, start on the filling by combining 1 ¼ cups of heavy cream along with 1 tsp each of instant espresso powder, allspice, and cinnamon in a small pot on a medium heat and bring to a bare simmer.

  5. Chop 9 ounces of high quality chocolate, place in a bowl, and combine with heavy cream mixture. SLOWLY mix so you don’t get air bubbles and once combined add 4 Tbsp of unsalted butter that’s cut into small pieces. Once it’s cooled a little, add 2 large lightly beaten eggs and slowly mix to combine.

  6. Remove pie crust from oven and top with chocolate mixture. Use a skewer to pop any air bubbles that rise to the top.

  7. Place in a 250°F oven for 30-35 minutes until jiggly but set.

  8. For the glaze to hold the strawberries in place, combine 3 Tbsp of hot butter with 2 ounces of chopped chocolate in a bowl and cover with foil for 30 seconds. Uncover and whisk to combine. Add 1 Tbsp of hot water and whisk in slowly.

  9. Spread glaze over the top, and top that with your chopped strawberries.

  10. Cut, serve, and enjoy!
